Lions and tigers can produce offspring and are separate species why can't we say the same for humans?

Lions are a different species than tigers. The definition as taught to me in zoology is that different species cannot produce offspring, yet they can. How then can we not say that the different races of humanity are not, in fact, separate species? I am asking out of curiosity, I am not racist in any way.
